Butternut Squash Quinoa Stew

This time of year calls for comforting meals that keep you cozy and feeling warm! We’re in love with this hearty looking Butternut Squash soup shared from Community member, Nichole!

Ingredients

1 bag of pre cut fresh/frozen butternut squash
3 1/2 cups chicken or vegetable broth
1 package of boneless, skinless chicken thighs (Make it vegetarian: Skip the chicken and add your favorite lean protein instead)
1 tbsp coconut oil
1 medium yellow onion, finely chopped
salt & pepper to taste
4 cloves garlic, minced
1 1/2 tsp dried oregano
1 can diced tomatoes
2/3 cup quinoa, uncooked
