Stir Fry:

1 package kelp noodles, well rinsed and drained
1 red bell pepper, chopped

2 cups baby bok choi, chopped

1 cup mushrooms

1 med carrot, julienned

3/4cup cucumber, chopped

Dressing:

3 tbsp almond or peanut butter

juice from one lemon

2 tbsp soya souce

1/2t tbsp ginger, grated

1 clove garlic, pressed

1 tbsp water

hot sauce of choice, if desired

Additional ingredients:

Scallions, sliced

Sesame seeds

Roasted Peanuts or almonds
